Villa Cozzano is located in the area between Montepulciano and Cortona, a landscape full of cities rich in history, art and culture and characterized by love for food and high quality wines.
The Etruscans were the first to give prestige to the territory from the culinary point of view. In Etruscan society the diet of the less well-off classes was distinct from that of the richer classes: the former essentially consumed vegetables (cereals, legumes and fruit) or cheese with vegetables and garlic, assuming proteins from wheat, eggs, seasoned cheese and beans, fats from olive oil and mainly drinking water; the latter preferred white meats accompanied by wine. Over time there was a gradual disappearance of the aristocratic dishes and a spread of popular dishes. The bread, rigorously produced without salt, maintained its traditional sacredness; it was important to never throwing it away (this is why also the stale bread was widely used in ancient recipes and is still widespread today thanks to Panzanella, Ribollita, Acquacotta and Pappa with tomato sauce). The wine, thanks to local production also found space in the table of the poorer classes; notwithstanding the simplicity of this way of cooking, the meals were very rich in nutrients.
These ingredients are still today the basis of our diet, thanks to recipes handed down from the older generations to the younger ones.
Make pasta by hand, prepare a pizza with organic ingredients harvested in our garden, brown the fine meat of the farmers in the area, use the extra virgin olive oil produced by our olive groves and the red wine DOP of our vineyards, prepare typical sweets with Cozzano honey and conclude by tasting some good “Vin santo” (translation of “Blessed Wine”).
We will show you the origins and the history of the dishes you will cook and at the end of the course you will be able to prepare scenic dinners for your friends.
Fresh pasta with wild boar sauce, pizza, pigeon in salmì, Pappa al pomodoro, ravioli, Panzanella, “chicken cacciatore” are just some of the many dishes you can learn to cook with us.
The course includes the realization of a complete meal (first, second and dessert).
